Easy riojana potatoes recipe

Ingredients:
- 1 kg potatoes
- 250 g chorizo
- 1 medium onion
- 1 green bell pepper
- 1 tbsp smoked hot paprika
- 1 bay leaf
- Salt, pepper to taste
- 1 tsp garlic paste
- Olive oil
Preparation:

Before starting, wash the potatoes thoroughly and peel them. Then cut them into pieces, and do the same with the green bell pepper and onion. Slice the chorizo.

Take a large pot and add a generous amount of olive oil. Sauté the onion and bell pepper over medium heat for two minutes, then add the garlic paste and chorizo and cook for another two minutes. Then add the potatoes.

Add the smoked hot paprika and the bay leaf. Pour in enough water to cover all the ingredients. Let everything simmer on low heat until the potatoes are tender.

Season with salt and pepper to taste. If you prefer a thicker or thinner consistency, simply adjust the amount of water you add.

You can serve it as a main dish or as tapas to accompany an appetizer.
