Kefta Tagine with Terre Exotique Spices
Ingredients for the Sauce:
- 500 g crushed tomatoes or tomato purée
- 1 sliced onion
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tbsp couscous spice blend
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp mild chili powder
- Salt and pepper
- 4 eggs

Prepare the Keftas:

In a bowl, mix the ground meat with the grated onion, garlic, cilantro, parsley, Terre Exotique couscous spice blend, cumin, paprika, salt, and pepper. Add the egg and breadcrumbs for better texture.

Form small meatballs, about the size of a walnut, and set aside.

Prepare the Sauce:

In a tagine (or deep pan), heat the olive oil over medium heat.

Sauté the onion and garlic until translucent.

Add the crushed tomatoes, couscous spice blend, cumin, paprika, mild chili powder, salt, and pepper.

Cover and let simmer for 15 minutes.

Cook the Keftas:

Add the meatballs to the tomato sauce and let them cook over low heat for about 20 minutes, stirring occasionally.

Add the Eggs:

Make small wells in the sauce and crack the eggs directly into them.

Cover and cook for a few minutes until the egg whites are set but the yolks remain runny.

Serve hot directly in the tagine, accompanied by fresh bread or couscous.

Garnish with fresh cilantro for extra flavor.
