The story behind bearnaise sauce

Contrary to popular belief bearnaise sauce does not come from the Bearn region. In fact it was originally created in Saint-Germain-en-Laye on the outskirts of Paris in the 19th century. It was invented by Jean-François Collinet, the chef of the Henri IV restaurant. And that’s the link with the Bearn region! King Henri IV was from Pau in the Bearnaise region; so Collinet made a tribute to Henri IV by naming his new invention after the King’s birthplace.
