The Botany of Blackcurrant Pepper
A Fully Edible Plant
The botanical name of blackcurrant pepper is *Ribes nigrum*. This plant takes the form of a shrub that can grow up to 1.3 meters tall. On this shrub, the leaves, fruits, and buds are all edible. In fact, blackcurrant pepper comes from the buds. Botanically speaking, "blackcurrant pepper" or "blackcurrant berry" is neither a pepper nor a berry. This famous French pepper is actually the bud of the blackcurrant plant! These buds are harvested in January, before the sap rises to produce fruit. Produced in France, *Terre Exotique* blackcurrant pepper is part of an initiative to promote French producers. Our blackcurrant pepper has been carefully selected for its variety. Named *Noir de Bourgogne*, the noblest of the 150 existing varieties, this blackcurrant pepper has exceptionally rich aromatic properties. Its production follows strict rules in compliance with the HACCP approach.
Blackcurrant Pepper and Its History
Blackcurrant pepper was first mentioned in the 12th century for its medicinal virtues. Then, in the 19th century, blackcurrant was widely used in various forms, particularly as a cream. This blackcurrant cream was first produced in Dijon by a café owner named Auguste-Denis Lagoutte. In the 20th century, the combination of white wine and blackcurrant cream was named *kir* in honor of a canon who drank this mixture daily. Blackcurrant pepper is also highly sought after in perfumery for its woody and animal notes, which are used in luxury fragrance compositions.
