Grape Seed Oil at the Huilerie Beaujolaise Mill

At the Huilerie Beaujolaise, grape seeds undergo a pressing process to extract their oil, which is then subjected to a refining process. This refining, a physico-chemical operation, involves neutralizing free fatty acids, discoloring the oil, and finally, deodorizing it.

How to Use Grape Seed Oil?

Traditional virgin grape seed oil is ideal for preparing a Bourguignon fondue and for frying. It is versatile and is the secret to creating your most flavorful and delicious mayonnaises and marinades. 

Some Suggestions for Using Grape Seed Oil

  • - Madelines with Grape Seed Oil: Mix the flour, sugar, and yeast. Make a well and add grape seed oil, oat milk, and lemon zest in the center. Mix until you have a smooth batter. Fill greased Madeleine molds with grape seed oil and bake for 10 minutes at 200°C;
  • - Fish Balls with Grape Seed Oil: In a saucepan, heat coconut milk with lime and curry powder. Soak the bread in water for a few seconds and squeeze it. Cut the fish into large pieces and blend it with ginger, bread, and egg. Add coriander, salt, pepper, and Espelette pepper. Blend. Form balls with floured hands. Fry them in grape seed oil. Add a squeeze of lime upon removal;
  • - White and Green Asparagus with Grape Seed Oil: Drizzle prepared asparagus with grape seed oil and bake for 15 minutes. Boil an egg for 6 minutes, then cool it. In a bowl, chop the egg and add mustard, grated garlic clove, lemon juice zest, and Parmesan cheese. Blend and add grape seed oil. Coat the asparagus with the sauce and serve.

Store preferably in a dry place, away from light. Keep between 8°C and 20°C.
