Breton Curry: A Blend of Spices that Combines Two Cultures

Spice Blend, Dish, Powder... What Is a Curry?

In the West, the term curry often refers to the blend of Indian-inspired spices used to flavor dishes. However, in India, it is more of a catch-all word that refers to a sauce-based dish, inspired by the Tamil word "kari," meaning "sauce dish." To refer to the spice blend, Indians prefer the term "massala," which means "mixture." Each region of India, and even each family, has its own curry recipe. It can be mild like yellow curry, hot like paprika-based red curry, or fresh like green curry, which is made with lemongrass and coriander. Traditionally, these ingredients are found in a curry blend: turmeric, ginger, cumin, fenugreek, and coriander. In this blend, it's impossible to forget the curry leaf, the Indian equivalent of the bay leaf. It comes from a tropical shrub, the Kaloupilé. Its leaves are often used in the composition of Indian curry. Curry is consumed in powder or paste form depending on preferences and recipes.

Curry of Prawns with Rice, Cardamom, and Breton Curry:

Sauté peeled prawns with pieces of mango, apple, pineapple, and raisins. Sprinkle with Breton curry. Let simmer with coconut cream. In the rice water, infuse five to six green cardamom seeds. Cook and serve immediately!

Spaghetti Clams with Breton Curry:

Sauté the clams with garlic, parsley, and shallots until they open. Save the cooking juice to which you will add cream and Breton curry. While it simmers, cook the spaghetti in a large volume of salted water.

We have developed an exclusive recipe, composed of Indian-inspired spices and delicate seaweeds such as dulse or wakame. Bretons may refer to Kari Gosse®, another spice blend invented in the 19th century by a pharmacist from Lorient, Mr. Gosse. However, be careful not to confuse the two!
