Mediterranean Couscous Recipe

Ingredients (serves 4):
- 250 g fine couscous semolina
- 250 ml hot water
- 2 tbsp olive oil
- 1 tbsp couscous spice blend
- 200 g cooked chickpeas
- 100 g pitted black olives, sliced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 100 g feta cheese, cubed
- 10 cherry tomatoes, halved
- 50 g crushed cashew nuts
- A few fresh mint leaves
- Salt and pepper to taste
