Mediterranean Couscous

Mediterranean Couscous Recipe 

 

 
 
 

 

Ingredients (serves 4): 

  • 250 g fine couscous semolina
  • 250 ml hot water
  • 2 tbsp olive oil
  • 1 tbsp couscous spice blend
  • 200 g cooked chickpeas
  • 100 g pitted black olives, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 100 g feta cheese, cubed
  • 10 cherry tomatoes, halved
  • 50 g crushed cashew nuts
  • A few fresh mint leaves
  • Salt and pepper to taste

Preparation: 

  1. Prepare the couscous:

    • Place the couscous in a large bowl and add the couscous spice blend.

    • Pour in the hot water and cover for 5 minutes.

    • Fluff the couscous with a fork, then add the olive oil. Mix well.

  2. Combine the ingredients:

    • Add the chickpeas, olives, bell peppers, cherry tomatoes, and cashew nuts to the couscous.

    • Gently mix to evenly distribute the ingredients.

  3. Plating and finishing touches:

    • Shape the couscous using a ring mold for an elegant presentation.

    • Add the feta cubes and sprinkle with fresh mint leaves.

    • Adjust seasoning with salt, pepper, and a drizzle of olive oil if needed.

  4. Enjoy:

    • Serve chilled or slightly warm, as a side dish or main course.
