Preparation: 

  • In a mixing bowl, combine the flour, sugar, vanilla brown sugar, and a pinch of salt.
  • Gradually add the milk while stirring to prevent lumps.
  • Next, incorporate the melted butter.
  • Break the eggs and add them to the mixture, then pour in the vanilla extract. Mix until the batter is smooth.
  • Let the batter rest in the refrigerator for at least 1 hour.
  • Take the batter out of the refrigerator about 20 minutes before cooking.
  • Heat a pan with a little olive oil, then pour a ladle of batter. Cook until the crêpe is golden on both sides.
  • For an extra indulgent touch, add flavored sugar, spread, and/or praline.
