La Confiserie d'Amboise decorates the Chenonceau Castle

A Dream in Color

 

The kitchen of the prestigious Château de Chenonceau has been transformed into a magical world of sweetness, thanks to the ingenuity and expertise of La Confiserie d’Amboise. Nicolas Viollet, a passionate confectioner, along with his apprentice, has turned the space into a colorful and gourmet scene where giant candy bears captivate visitors.

At the heart of this extraordinary decoration are monumental sculptures of bears, standing one meter tall. These works of art are built from sugar structures, crafted with artisanal precision. But the true brilliance comes from the surface of these bears, entirely covered in hundreds of berlingot candies.

 

Berlingots Made the Traditional Way

 

 

Faithful to a tradition spanning several decades, Nicolas Viollet uses machines dating back to the 1970s and even a berlingot press from 1914 to craft his candies.

Each bear requires three days of meticulous work. Every candy is carefully placed by hand to fully cover the sugar structure, creating a beautiful patchwork.

Displayed in the historic kitchen of the château, these bears captivate visitors, enchanting both young and old.
