Complete sandwich recipe
Ingredients for the recipe:

2 slices of bread

2 slices of ham
1 handful of salad leaves
1 sliced tomato
2 slices of cheddar
Salt and pepper
Ingredients for the béarnaise sauce :
- 2 egg yolks
- 125g butter
- 5 cl of tarragon vinegar
- 2 cl of dry white wine
- 2 chopped shallots
- 3 teaspoons of Terre Exotique béarnaise sauce mixture
Preparation of the béarnaise sauce :

In a saucepan, melt the butter over low heat.

Remove from the heat, add a teaspoon of the béarnaise sauce mixture.

In another saucepan, combine the shallots, vinegar and white wine, then let reduce.

Remove from the heat, pour this reduction over the egg yolks and whisk vigorously.

Return the mixture to the heat, stirring continuously until it forms a creamy foam.

Once the mousse has become creamy, add a second teaspoon of the mixture, remove from the heat and whisk in the melted butter.
Preparation of the sandwich :

Toast your bread slices.

Wash and drain the salad leaves, then slice the tomato into rounds.

Spread the béarnaise sauce on one side of each slice of bread, and place a slice of ham on one of the slices of bread.

Add the tomato slices on top of the ham and place the salad leaves on top of the tomatoes.

Add the cheese slices on top of the salad. Finish with the second slice of ham.

Close the sandwich with the other slice of bread, béarnaise sauce towards the inside.

Season with salt and pepper, then immediately cut the sandwich in half.
