Carpaccio of scallops with white pepper from Costa Rica
Ingredients for the recipe:
- 6 scallop meats (without coral)
- 1 generous drizzle of extra virgin olive oil from Huilerie Beaujolaise
- 1 lime
- 1 yellow lemon
- 2 pinches of white pepper from Costa Rica Terre Exotique
- ½ pomegranate

In a plate, arrange thin slices of scallops.

Drizzle with olive oil, add the zest of a yellow lemon, the zest of a lime, a few pomegranate seeds, and a few turns of the mill with white pepper from Costa Rica.
