Here’s a selection of recipes for summer salads, take them in your lunchbox to work or enjoy them relaxing on your holidays! Try out these super unusual recipes, 4 easy summer salads with Terre Exotique’s special hint of spice:
Tasty tomato salad

Ingredients:
- 4 juicy tasty tomatoes
- 3 spoons seeds for salad
- 2 spoons ground cashew nuts
- Extra virgin olive oil
- 1 splash Modena balsamic vinegar
- Seasoning: salt and Red Kampot pepper
- Wash the tomatoes and chop into medium sized pieces.
- For the vinaigrette: mix the balsamic vinegar with 3 tablespoons of olive oil and add a pinch of salt and pepper. Fleur de sel and pepper from Terre Exotique’s wide selection.
- Grind the cashew nuts and the seeds for salad.
- Mix the tomatoes and the vinaigrette and chill.
- Decorate with the seeds just before serving. Enjoy!
Sardine and potato salad

Ingredients:
- 6 ratte potatoes
- 1 teaspoon unsalted butter
- 1 tin sardines in olive oil
- ½ bunch watercress
- A pinch of Viking salt
- ½ green apple
- 1 teaspoon mustard with grilled spices
- 2 teaspoons cider or apple vinegar
- A drizzle of extra virgin olive oil
- Chives
- Wash the potatoes and chop into small pieces. Put the butter and the olive oil in a frying pan and leave the potatoes to cook for about 20 minutes, until they are tender and golden brown. Season with a few pinches of Viking salt.
- For the vinaigrette: mix the mustard, cider vinegar, olive oil and a few pinches of Viking salt.
- Mix the potatoes with the sardines, the watercress, apple, chives and serve.
King prawn and avocado salad

Ingredients:
- 250g peeled and cooked King prawns
- ½ bunch of salad leaves (rocket or other)
- 3 teaspoons ground Timur berry
- 1 avocado sliced thinly
- 100g sundried tomatoes in olive oil
- 1 drizzle extra virgin olive oil
- Salt and pepper from Terre Exotique’s wide selection
- If you buy frozen King prawns, you’ll need to boil them to make sure they’re properly cooked. Leave to cool.
- Wash the salad and slice the avocado.
- Mix all the other ingredients.
- For the vinaigrette, just before serving, add a citrus hint to your dressing with lemon flavoured olive oil perfect with the grapefruit freshness of Timur berry. The perfect match!
- Grind the Timur berry just before serving so it fully releases its amazing aromas to enhance your salad.

Pear and blue cheese salad

Ingredients:
- ½ bunch raw fennel
- 1 avocado thinly sliced
- 4 teaspoons golden sesame seeds
- 150g blue cheese (roquefort or goat’s cheese)
- 1 pear peeled and thinly sliced
- A sprinkle of pine nuts or seeds for salad
- Wash and prepare the fennel (to remove its slightly bitter taste). Then slice the fennel thinly.
- Do the same with the pear and the avocado; the thinner the slices, the more delicate the final result will be!
- Mix all the remaining ingredients together.
- Decorate with golden sesame seeds and seeds for salad just before serving.
- You can also make one of the vinaigrettes prepared above.
