The botanical family of Piper can be segmented as follows:

  • Piper nigrum: it is the classic round pepper, the essential of our tables;
  • the tailed peppers: such as the wild voatsiperifery pepper from Madagascar or the cubeb pepper from Indonesia;
  • long pepper: like the Ethiopian timiz pepper, the long java pepper or the Indian assam pepper.

The degree of ripeness at harvest and the post-harvest process will give the pepper its final color and flavors.
