Ingredients

  • 2 slices of whole wheat or rustic bread, lightly toasted
  • 1 ripe avocado
  • 2 eggs
  • 7 sesame seeds
  • Watercress or radish sprouts (for garnish)
  • Salt and pepper
  • A dash of lemon juice
  • A bit of olive oil (optional)

Preparation

 

Preparing the soft-boiled eggs:

    • Heat water in a small saucepan. Once the water is boiling, gently place the eggs in the water.
    • Let them cook for about 6 minutes to get soft-boiled eggs with slightly runny yolks.
    • Remove the eggs from the water, run them under cold water, and gently peel them.

 

Preparing the toast:

    • While the eggs are cooking, mash the avocado in a bowl with a fork.
    • Add a dash of lemon juice, a pinch of salt, and pepper, and mix well.

 

Assembling the toasts:

    • Generously spread the mashed avocado on each slice of toasted bread.
    • Cut the soft-boiled eggs in half and place them gently on the toasts.
    • Sprinkle the toasts with the 7 sesame seed mix.
    • Garnish with watercress or radish sprouts for a fresh touch.

 

Final seasoning:

    • Finish with a drizzle of olive oil and a pinch of salt and pepper if needed.
