We are in the district of Salyan, surrounded by Timur Berries (Zanthoxylum armatum) in their wild state.
Timur originated in this area and a little higher up in the mountains.

[title]Triage et sélection des baies Timur[/title]
Once the harvest is complete, the Timur berries are dried and sorted manually. On average it takes one day to get 25 kg of premium quality berries.
The selection is made using sieves, in three phases: first the removal of foreign material, then the removal of black seeds and the pericarps followed by the selection of the most mature berries.
