Lobster with Anise Butter and Kampot Pepper, served with Caramelized Apples
Ingredients:
For the Lobster:
- Fresh lobsters
- Unsalted butter
- Green anise seeds
- Kampot pepper
- Salt
For the Caramelized Apples:
- Apples (sweet-tart varieties like Pink Lady or Reine des Reinettes)
- Unsalted butter
- Liquid honey
- Ground cinnamon
- Kampot pepper
Preparation of the Lobster:
- Cook the lobsters on the grill or in salted boiling water until tender. Set aside.
- In a pan, melt the butter over low heat. Add a tablespoon of anise seeds and a tablespoon of Kampot pepper. Let the flavors infuse gently.
- Strain the sauce through a fine sieve to remove any solids.
- Split the lobsters lengthwise and generously fill them with the infused butter sauce.
Preparation of the Caramelized Apples:
- Peel the apples and slice them into thin pieces.
- Heat a knob of butter in a pan over medium heat. Add the apple slices and sauté lightly.
- Drizzle with honey, add a pinch of cinnamon, and a dash of Kampot pepper. Mix well to coat the apples evenly.
- Cook over low heat until the apples are tender and caramelized with a glossy finish from the honey.
Plating:
- Place the lobster with the anise butter at the center of the plate.
- Arrange the caramelized apples beside it. The sweetness and spice of the apples perfectly complement the delicate, peppery flavors of the lobster.
