Lebanese Falafels
Ingredients for the recipe :
- 170g chickpeas
- 2 cloves of garlic
- ½ onion
- ½ bunch of flat-leaf parsley
- ½ bunch of coriander
- A drizzle of Terre Exotique olive oil
- ½ teaspoon of Terre Exotique sesame seeds
- 1 teaspoon of Terre Exotique ground cumin
- ½ teaspoon of Terre Exotique Aleppo pepper flakes
- 2 pinches of Terre Exotique Madagascar fleur de sel
- 2 pinches of Terre Exotique crushed voatsiperifery pepper
Methods:
- Drain the chickpeas and pat them dry completely.
- In a food processor, add the chickpeas and pulse until mashed. Set aside.
- In the same food processor bowl, add the parsley, coriander, garlic, and half onion. Pulse until finely chopped, then add to the mashed chickpeas.
- Add the spices, salt, pepper, cumin, Aleppo pepper flakes, and sesame seeds to the mixture. Mix well.
- In a saucepan or deep fryer, heat some oil. Once the oil is hot, use two tablespoons to form the mixture into quenelles and fry them in the hot oil until golden brown.
- Place the falafels on a paper towel to absorb excess oil.
- Serve with a salad or in a pita bread with yogurt sauce, and enjoy!
