Recipe for cod loin with saffron sauce and chanterelles
(for 2 person )
Ingredients
- 2 cod loins
- 1 jar of dried chanterelles
- 200 ml of heavy cream
- 8 saffron threads
- Kampot red pepper, fleur de sel
- 1 lime (zest)
- 450 g of steamed potatoes
Preparation
- Rehydrate the chanterelles: soak them for 15-20 minutes in warm water, then drain.
- Prepare the saffron sauce: heat the cream with the saffron for 10 minutes over low heat, then remove from the heat.
- Cook the cod: place a knob of butter in a pan and sear the fish.
- Sauté the chanterelles: cook them for 5 minutes in butter, season with salt and pepper.
- Potatoes: steam them and lightly salt.
- Plate and enjoy.
