Recipe for Madagascar Vanilla King Cake, a Terre Exotique Signature
Ingredients:
- 2 rolls of thick, all-butter puff pastry
- 200 g pastry cream
- 25 g white sugar
- 25 g Terre Exotique brown sugar
- 1 tsp of vanilla brown sugar
- 120 g almond powder
- 100 g butter
- 1 egg
- 2 egg yolks
- 10 cl whole milk
- 1 Terre Exotique Bourbon vanilla pod
- 1 tbsp amaretto (almond liqueur)
- 1 tbsp amber rum
Preparation:
- Mix the almond powder, sugars, and egg in a bowl. Add melted butter, vanilla pod seeds, rum, and amaretto, then mix again. Finally, add the pastry cream and stir.
- Transfer the almond cream into a piping bag. Spread it in the center of one puff pastry sheet. Moisten the edges with water using a brush, place the hidden figurine, and cover with the second puff pastry sheet.
- Press the edges firmly to seal the cake and prevent cream from escaping during baking.
- Prick a small hole in the center with a toothpick and decorate as desired.
- In a bowl, mix 2 egg yolks with a bit of milk, then brush this mixture over the cake for a golden finish.
- Bake at 180°C (350°F) for 35 minutes.
