Salmon Skewers with Leeks
Ingredients for the recipe:
- 600 g of salmon fillet, cut into 3 cm cubes
- 2 leeks, cut into 3 cm pieces
- 1 lemon (zest and juice)
- 3 tablespoons of olive oil from Huilerie Beaujolaise
- 2 tablespoons of soy sauce
- 1 tablespoon of honey
- 1 teaspoon of freshly grated ginger
- Salt and pepper to taste
- Terre Exotique bagel spice blend
- Wooden skewers (pre-soaked in water) or metal skewers
Methods:
Preparation of the Salmon:
Cut the salmon fillet into approximately 3 cm cubes.
Place them in a large bowl.
Preparation of the Leeks:
Wash the leeks thoroughly to remove any dirt.
Cut them into 3 cm long pieces.
Marinade:
In a bowl, mix the olive oil, soy sauce, honey, lemon juice, lemon zest, and grated ginger.
Pour this marinade over the salmon cubes and mix well to coat them.
Add the leeks as well.
Cover the bowl with plastic wrap and let marinate in the refrigerator for 30 minutes to 1 hour.
Assembling the Skewers:
On wooden or metal skewers, alternate the salmon pieces and leek pieces.
Ensure that each skewer has a good distribution of salmon and leeks.
Cooking:
Preheat the oven grill or prepare a barbecue.
Place the skewers on the hot grill and cook for about 10 minutes, turning them halfway through. The salmon should be well-cooked but still juicy, and the leeks should be tender and slightly caramelized.
Season the skewers with Terre Exotique's bagel spice blend, salt, and pepper to taste just before serving.
Serve the skewers hot, with rice, grilled vegetables, or a green salad.
