What is Tellichery black pepper?
Where does Tellichery black pepper come from?
Tellichery pepper is part of the Piper nigrum species, which means it’s a pepper and not a spice. It is carefully harvested by hand when the peppercorns are red and then they are left out to dry in the sun. Black pepper has stronger more intense flavours than white pepper and also has a hotter aftertaste in the throat. This is because it keeps its pericarp where the piperine, which is what makes pepper hot and spicy, is concentrated.Where to use Tellichery black pepper
